Recipe
This simple, flavorful salad is full of crunch, color and herbal notes. Cool cucumbers are tossed with sweet red onions and tangy tomatoes, and complemented by parsley, mint and a simple lemon vinaigrette.
Ingredients
- 4 seedless cucumbers, peeled and diced
- 1/2 small red onion, slivered
- 1/4 cup fresh parsley, chopped
- 1/2 cup fresh mint, chopped
- 2 medium tomatoes, cut in wedges
- 1/4 cup fresh lemon juice
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon salt
- Freshly ground black pepper
Preparation
- Place the cucumbers, red onion, parsley, mint, and tomatoes in a large bowl.
- In a cup, whisk the lemon juice, olive oil, salt and pepper, and drizzle over the vegetables. Toss to coat and serve.
Serving Suggestion
Serve with roasted chicken, beef and lamb gyros or falafel.
