Raspberry-chocolate Yogurt Bark

When you crave a cool, sweet, frozen treat, make this easy yogurt bark. Made with high-protein Greek yogurt, pure maple syrup and fruit, it’s a snack that feels like eating a fun treat from the ice cream truck. On a summer day, these are just what you need to tide you over until dinner or for a sweet snack before bed.

Ingredients

  • 3 cups full-fat plain Greek or Icelandic yogurt
  • 1/2 cup pure maple syrup
  • 4 tablespoons cocoa powder
  • 1 teaspoon vanilla
  • 1 cup raspberries, frozen or fresh

Preparation

  1. Line a rimmed baking sheet with parchment paper.
  2. In a large bowl, whisk yogurt, maple syrup, cocoa and vanilla  to combine.
  3. Pour the yogurt mixture into the parchment lined pan and spread evenly. Sprinkle with raspberries.
  4. Freeze until solid, about 3 hours, depending on your freezer.
  5. Using the edges of the parchment paper, lift the yogurt bark out of the pan and place on a cutting board. Use a sharp knife to cut into diamonds or squares. Alternatively, simply break the bark into chunks.
  6. Place the pieces in an airtight container, with waxed paper or parchment between the layers and store in the freezer.

Serving Suggestion

Experiment with other toppings to customize your yogurt bark! Instead of raspberries, try diced banana and walnuts or chopped peanuts and mini chocolate chips.
