Curried Rice with Pistachios

This simple rice pilaf is a cinch to make. If you have leftover rice, you can whip this up in no time at all.


  • 2 cups brown rice, medium grain
  • 4 cups water
  • 1/2 cup apple juice
  • 1 tablespoon lemon juice
  • 1/2 cup coconut milk
  • 1 tablespoon curry powder
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon sea salt
  • 1/2 cup pistachios, roughly chopped
  • 1/2 bunch scallions, sliced


  1. In a small saucepan, bring water to a boil. Add rice and reduce heat, and simmer until all water is absorbed. Set aside and let cool.
  2. In a blender or small food processor, blend together apple juice, lemon juice, coconut milk, curry powder, salt, and pepper.
  3. In a large bowl, toss cooled rice with dressing, scallions, and pistachios.
