Broccoli Cheddar Turkey Meatballs

10For a truly winning appetizer, try making these delightful meatballs. Lean ground turkey gets a cheesy note from sharp cheddar, and bits of broccoli are the hidden veggie. Serve these in a warmer with a bowl of dressing on the side.
Ingredients
- 1/2 bunch broccoli
- 2 pounds ground turkey
- 1 cup instant oatmeal (quick oats)
- 2 large eggs
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 4 ounces sharp cheddar cheese, shredded
- Ranch salad dressing
Preparation
- Preheat the oven to 375 F. Line two sheet pans with parchment, reserve.
- Using a knife or food processor, finely chop broccoli to the size of rice, until you have 2 cups.
- In a large bowl, combine the turkey, oatmeal, eggs, salt and pepper and mix. Add the broccoli and cheddar and mix well.
- Use a 2-tablespoon-sized scoop to portion and shape into 1-inch balls. Place on the sheet pans, taking care that the meatballs don’t touch each other.
- Bake for 20 minutes, or until an instant-read thermometer inserted in a meatball registers 165 F.
Serving Suggestion
Serve with toothpicks and a bowl of ranch dressing for dipping.
