For a quick weeknight meal, try this Asian-inspired skillet, where quick-cooking ground turkey simmers in lime, soy and honey.
Ingredients
- 1/4 cup lime juice
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 2 tablespoons canola oil
- 1 onion, thinly sliced
- 2 cloves garlic, chopped
- 1 pound ground turkey
- 1 teaspoon red pepper flakes
- 8 ounces snap peas, trimmed
- 1/2 cup fresh mint
- 1/4 cup chopped roasted peanuts
- Cooked rice
Preparation
- In a cup, stir the lime juice, soy sauce and honey and reserve.
- Place a large saute pan over medium-high heat. Drizzle with canola oil and add the onions. Stir until the onions start to soften, then reduce the heat to medium and cook for about 5 minutes, until golden and lightly browned in spots.
- Raise the heat to medium-high. Add the garlic and stir for a minute, then crumble in the ground turkey and add the pepper flakes. Stir, breaking up the meat as it cooks, for about 5 minutes.
- When the turkey is browned, pour the lime juice mixture over the pan and stir. Bring to a boil and cook until thickened.
- Sprinkle the peas over the meat and cover the pan to steam them for 3-4 minutes. Sprinkle with mint and peanuts and serve over rice.
Serving Suggestions
For an alternative to rice, serve over butter lettuce leaves!
