Fragrant and hearty, this pork loin hash is a great way to use leftover pork loin, but tasty enough to make any time at all. Substitute seitan for pork for a delicious vegetarian version.
Ingredients
- 3/4 pound cooked pork loin, cubed in 1 inch pieces
- 1 1/2 cups water
- 1 pound potatoes, diced
- 1 cup yellow onion (about 1/2 large onion), diced
- 1 clove garlic, minced
- 1/2 green pepper, diced
- 1/2 red pepper, diced
- 1 cup corn kernels, cooked
- Salt and pepper, to taste
Spice Blend
- 1 tablespoon brown sugar
- 1/2 tablespoon each, chili powder, chipotle powder, garlic powder, dry mustard and salt
- 1 teaspoon each thyme, oregano, coriander, cumin, black pepper
- 1/4 teaspoon cinnamon
Preparation
In a large non-stick skillet, bring potatoes, onion, and garlic to boil with the water. Cover and let cook for 7-8 minutes. Uncover the skillet and add the peppers. Cook for another 5 to 8 minutes while the liquid is evaporating. Add the corn and pork loin and stir well. Add 2 tablespoons of the spice blend and continue to cook for another 5 minutes, stirring frequently to prevent sticking. Add salt and pepper (or more spice blend) to taste.
