Sicilian Citrus Salad with Olives and Pistachios

Cut brilliantly colored oranges into rounds and spread them on a platter before drizzling with a vinaigrette that brings out their juicy sweetness. A topping of tangy olives, crunchy pistachios and sweet basil leaves makes this salad irresistible.

Ingredients

  • 6 medium seedless oranges
  • 1/4 cup slivered red onion
  • 1/2 cup pitted kalamata olives, sliced
  • 1/2 cup fresh basil, sliced
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 cup shelled pistachios, toasted

Preparation

  1. Peel the oranges by slicing away the peel and pith, then slice into thin rounds. Place the rounds on a platter.
  2. Sprinkle the red onions and olives over the oranges, then sprinkle with basil.
  3. In a cup, whisk the balsamic vinegar, olive oil, honey and salt. Drizzle over the oranges. Sprinkle with pistachios and serve.
