Santa Fe Black Bean Salad

Ingredients
Dressing
- 1/4 cup vegetable oil
- 1/4 cup fresh lime juice
- 2 tablespoons fresh cilantro, finely chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper (optional)
Salad
- 1 (15-ounce) can black beans, drained and rinsed (or 2 cups dried beans, soaked and cooked)
- 1 cup fresh or canned corn kernels
- 1/2 cup green bell pepper, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup red onion, diced
Preparation
- In a medium bowl, whisk together the oil, lime juice, cilantro, cumin, salt, and cayenne pepper.
- Toss the vegetables with dressing and let stand at room temperature for 30 minutes, mixing occasionally. Season to taste, adding more lime juice if desired.
