- 1 1/4 cups graham cracker crumbs
- 6 tablespoons unsalted butter, melted
- 2 8-ounce blocks cream cheese, room temperature
- 3/4 cup sugar
- 1-2 lemons, zested and juiced
- 2 large eggs
- 3 tablespoons honey
- 1 teaspoon lemon juice
- 4 medium kiwis, peeled and thinly sliced
- 6 large strawberries, sliced from shoulder to tip
Preparation
- Preheat the oven to 350 F. Butter an 8-inch square baking pan. Cut a piece of parchment paper 8 inches wide and place it in the buttered pan so that the excess hangs over the edges.
- Mix the graham cracker crumbs and butter and stir. Press into the pan, covering the bottom evenly.
- Rinse and dry the processor. Place the cream cheese in the bowl and puree until smooth. Add the sugar, processing until smooth. Add 1 tablespoon lemon zest, ¼ cup lemon juice and eggs and process, until very smooth.
- Pour the mixture over the graham crackers and smooth the top.
- Bake for 45-50 minutes. The edges will be puffed and slightly cracked, and the middle will barely jiggle when gently shaken.
- Cool completely, then refrigerate until cold.
- When serving, place the honey and lemon juice in a cup and stir to mix well.
- Arrange the kiwis and strawberries on top of the cheesecake, alternating slices and overlapping slightly. Drizzle and gently brush the fruit with the honey mixture.
Serving Suggestion
Top with a dollop of fresh whipped cream and serve alongside a cup of your favorite coffee.
