- 1/2 cup honey
- 1 teaspoon red pepper flakes
- 8-ounce round of brie
- 1 tablespoon turbinado sugar
Preparation
- In a small saucepan, combine honey and red pepper flakes. Place over medium heat and bring to a boil. Remove from heat and let steep for 10 minutes. Place a fine mesh strainer over a bowl or jar and strain the honey, pressing with a spoon to extract the liquid. Discard pepper flakes.
- Preheat the oven to 350 F. Get an oven safe plate or pan to bake and serve the brie.
- Use a long knife to slice off the top rind of the brie and discard. Place the brie on the plate.
- Drizzle 1 tablespoon of the honey over the cheese, then sprinkle with the turbinado sugar. Set remaining honey aside.
- Bake the brie for 5 minutes, then turn on the broiler. Place the brie on the top rack.
- Watch the brie as it broils ― it will bubble and the sugar will melt and develop browned spots. In 2 to 3 minutes, the top should be browned and melted.
- Let cool for 2 minutes before serving. Drizzle with remaining honey, if desired.
Serving Suggestion
Serve with gingersnaps or crackers (remember to provide a spoon for scooping up the gooey cheese).
