Charred Broccoli with Walnuts

Think of your broiler as a grill that you can use in the winter to give veggies a hint of char and sweetness. This is the fastest way to make broccoli into a winning taste sensation.

Ingredients

  • 1 bunch broccoli
  • 3 tablespoons extra virgin olive oil, divided
  • 2 teaspoons lemon zest
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup chopped walnuts
  • 1/4 cup shredded Parmesan cheese

Preparation

  1. Preheat the broiler on high.
  2. Cut the broccoli into bite-sized florets, then peel and chop the stems. Place on a large sheet pan. Drizzle with 1 tablespoon of olive oil and toss to coat.
  3. Spread the walnuts on a small baking sheet and place on the bottom rack of the oven while the broccoli cooks.
  4. Broil the broccoli for 2 to 3 minutes at a time, turning the florets with tongs as they darken and crisp on the edges. This will take around 8 minutes. Remove from broiler and cool on a rack.
  5. In a cup, stir the remaining olive oil, lemon zest, lemon juice, salt and pepper, and pour over the warm broccoli. Toss to coat.
  6. Serve topped with walnuts and Parmesan.

Serving Suggestion

If you have leftovers from after dinner, they can go into a pasta or a salad the following day.
