Blueberry Cobbler

Everybody loves blueberries, especially when they are bubbling under a blanket of tender, sweet biscuits. Easier to make than pie, but just as appealing, cobbler is a classic homestyle fruit dessert.

Ingredients

  • 1 stick unsalted butter, plus a sliver for greasing
  • 6 cups blueberries, washed and drained
  • 1 cup sugar, divided
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat pastry flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs, lightly beaten
  • 1/2 teaspoon vanilla

Preparation

  1. Preheat the oven to 375 F. Use a sliver of butter to grease a 2-quart baking dish.
  2. In the baking dish, combine the blueberries and and toss gently to mix.
  3. In a large bowl, combine the all-purpose flour, pastry flour, remaining ΒΌ cup of sugar, baking powder and salt, and mix well.
  4. Use the coarse holes of a grater to shred the butter into the bowl, tossing the shreds to coat with flour.
  5. Stir in the eggs and vanilla. When a dough forms, scoop 1 tablespoon-sized portions of dough and place them evenly over the berries, leaving a little space between scoops.
  6. Bake for 40-45 minutes, until the berries are bubbling and the topping is golden brown. Use a toothpick to test the topping for doneness; it should come out with no wet batter attached.
